Beef Stew
Our family loves a hearty beef stew. Here’s how you can prepare it for your family. I use three packages of stew meat to feed our family of 8 (with 7 eating since baby doesn’t eat table food yet.) This will last us for one meal with some leftovers.
- In a soup pot, pan sear stew meat evenly in some olive oil for just a minute or two along with one diced onion.
- Add 6-8 cups of water to stew meat and onion mixture. Bring to boil and then reduce to simmer. (Skim off the scum that rises to the top.)
- While soup is simmering. Dice up 6-8 potatoes and about 4 carrots. You can add any additional veggies you may want. Season with salt and pepper to taste.
- Add diced veggies to soup and cover, stirring occasionally until vegetables are tender.
- You can add separately prepared rice or noodles when the soup is finished.
